Despite its red color, the bibim makguksu is mild and lightly seasoned, with soft buckwheat noodles that break easily and carry a thin coat of sauce. Ladle in a little of the beef-bone broth set alongside and it turns into a brothy noodle dish with deeper savoriness. The third generation now runs the noodle pots, and dumplings filled with nothing but napa cabbage and tofu appear only from winter through March.
