The greens are not tossed in one shared dressing, and each plate has its own scent and chew, with rarer finds like lion's mane mushroom among them. There are three sets: mountain greens, mackerel and soy-marinated crab, and even the basic one includes grilled dried pollack. Turmeric rice comes in a pot; scoop it out, pour in hot water, and the crust left behind becomes nurungji to finish. Anyone 10 or older, children included, has to order a full portion.
