A whole duck is precisely butchered into individual cuts and served for diners to grill themselves on an open charcoal grate. Cooking without oil on the slatted grill eliminates any gaminess, preserving a clean, subtly rich flavor. Each cut is sliced thin enough to sear quickly on both sides like beef, and the variety of textures and flavors across different parts makes the meal engaging. The concept of grilling fatty duck directly over charcoal is itself distinctive, and the grate design prevents the meat from sitting in rendered fat. The accompanying buchu jaeregi (chive seasoning) pairs exceptionally well with the duck. Ordering the sticky rice set brings aged kimchi fried in anchovy oil, which adds deep umami when wrapped around the grilled meat.
