Samcheong-dong Sujebi 삼청동수제비

Near Bukchon. Samcheong-dong Sujebi is a hand-torn noodle restaurant on Samcheong-ro in Jongno-gu, Seoul, and has long been considered one of the defining dining spots in the Samcheong-dong neighborhood. The signature sujebi arrives in a small clay pot filled with an anchovy-based broth, zucchini, clams, and thin pieces of hand-torn dough. Textures across the dough vary from soft to pleasingly chewy, adding dimension to each spoonful. The thick, crispy gamjajeon, a potato pancake, is the essential accompaniment, pairing naturally with the warm broth. The combination of the hearty soup and refreshing yeolmu kimchi, made from young radish, has contributed to the restaurant's lasting popularity. A queue forms outside consistently, but tables turn over quickly enough that wait times are shorter than the line suggests. The restaurant may close before the listed 7:30 p.m. cutoff on certain days, so arriving with time to spare is advisable.
