The signature sujebi arrives in a small clay pot filled with an anchovy-based broth, zucchini, clams, and thin pieces of hand-torn dough. Textures across the dough vary from soft to pleasingly chewy, adding dimension to each spoonful. The thick, crispy gamjajeon, a potato pancake, is the essential accompaniment, pairing naturally with the warm broth.
