Samcheong-dong Sujebi 삼청동수제비

Samcheong-dong Sujebi is a hand-torn-dough restaurant at 101-1 Samcheong-ro in Jongno-gu, Seoul. It has served sujebi near the entrance to Samcheong-dong since 1982. The signature bowl arrives in a small jar-shaped earthen pot. Anchovy broth holds clams, zucchini, potato, and pieces of dough pulled by hand. Unlike uniformly cut noodles, the pieces differ slightly in size, thickness, and softness. Some are very tender and spread across the spoon, while others retain a modest chew. Perilla aroma remains behind the broth, and clams and anchovy provide the marine saltiness. Potato pancake is cooked as a thick disc with browned surfaces and a soft potato center. Seafood green-onion pancake spreads scallions and seafood across a wider batter and contains more distinct ingredients than the potato version. Two diners can divide one sujebi and one potato pancake, alternating hot broth with a dense fried starch. A larger party can add seafood pancake to compare potato with scallion and shellfish instead of ordering several identical soup bowls. Young-radish kimchi and napa-cabbage kimchi are the basic sides, supplying cold acidity and fermentation between the warm dough pieces. A line forms outside during meal periods, although bowls tend to arrive quickly because broth and dough are served from a larger cooking batch. Orders may end before the evening cutoff when ingredients are exhausted. Photography inside is limited to each diner's own food. A small parking area sits across from the restaurant. The location is reachable on foot along routes connecting Samcheong-dong, Bukchon, and Gyeongbokgung. Anchovy-clam broth, irregular soft dough, two substantial pancakes, and two kimchis are the concrete elements of the meal.
