Ordering the set meal fills the table with an array of fermented pastes — ureongi ssamjang, ureongi deokjang, and jjimjang — each carrying a distinct character that keeps the meal varied and engaging. The ssamjang is smooth and nutty, while the deokjang brings an assertive, spicy kick. Every paste is loaded with large, chewy river snails that deliver a satisfying bite with each spoonful. Wrapping rice and paste in fresh lettuce with pickled garlic creates the ideal combination, and mixing the paste directly into rice produces an intensely savory, salty bowl on its own. The ureong-i buchim (snail pancake) served as a side opens the appetite with a tangy, spicy edge. Jeyuk bokkeum (stir-fried pork) is available as an add-on but comes at a premium price; given the richness of the pastes alone, a satisfying meal is entirely achievable without it.
