The first branch of Eulmildae, one of Seoul's most storied pyeongyang naengmyeon houses, located at the end of an indoor shopping arcade near Gangnam Station. The restaurant carries the heritage of Eulmildae, which began in 1976 as Yeomri Bunsik and developed its distinctive flavor identity over decades. The broth is made exclusively from beef simmered for over ten hours, producing a characteristically rustic yet deeply savory richness. Ice shards come as default, but since they prevent the beef fat from fully dispersing and can mute the broth's nuttiness, ordering 'geonaeng' (ice removed) is the recommended way to experience the stock's true essence. The noodles blend buckwheat and starch for a springy, coarse texture, and applying mustard directly to each bite of noodle rather than dissolving it in the broth preserves the soup's integrity to the last drop. The suyuk features tender chadol-yangji (brisket point) wrapped with scallion threads and blanched garlic, dipped in soy sauce - a combination that produces a layered interplay of sweet, savory, and pungent. The mung bean pancake, pan-fried in pork fat, delivers an intensely meaty aroma. Upon seating, a warm cup of unseasoned yangji broth arrives as the house's signature welcome gesture.
