Bakery Bam Maeul occupies a hanok-inspired building at 5-9 Baekmigoeul-gil in Gongju, directly facing Gongsanseong Fortress. A certified master baker works with Gongju chestnuts across laminated pastry, choux, tart filling, enriched bread, frozen dessert, and drinks. The chestnut pie is built from thin pastry layers baked until the exterior flakes and breaks cleanly. Inside, smooth chestnut paste surrounds small whole pieces of chestnut, creating a compact center beneath the delicate shell. The chestnut eclair uses an elongated choux case instead of laminated dough and fills its hollow interior with chestnut cream, so it is softer and lighter than the pie. In the chestnut cheese tart, a firm pastry base supports a baked filling with the richness of egg and cheese together with chestnut. Coco-bam is formed as a small, bite-size baked sweet, while the tall pandoro-style loaf contains generous chestnut pieces within a tender, moist crumb. Chestnut gelato takes the same regional ingredient in a cold, dense form with finely processed nut solids rather than pieces enclosed by dough. A chestnut latte dissolves its sweetness into milk and provides a liquid counterpart to the baked selection. These products do more than attach one topping to several pastries: the chestnut functions as paste in the pie, cream in the eclair, a baked component in the tart, distinct pieces in the loaf, and a blended base in the gelato and latte. The second floor includes window seats oriented toward the fortress walls and the landscape around Gongsanseong. Dark wood, a tiled roofline, and the proportions of the hanok-style exterior establish a visual connection with the historic site across the road.
