Shredded raw Gongju chestnuts top the yukhoe bibimbap, and every spoonful has a crunch of chestnut in it. The gochujang dressing leans spicy and clean, though more than one diner has found the beef cut so fine and so scant that it barely registers. Cucumber goes into the bowl as well; ask for it to be left out when ordering if that is a problem.
