An's Bakery 안스베이커리

An's Bakery is the Guwol flagship of master baker Ahn Chang-hyun at 664 Inju-daero in Namdong-gu, Incheon. The bakery began operating in Guwol-dong in the early 1990s, and Ahn was designated Korea's seventh Master Baker in 2009. The Guwol shop serves as the headquarters, and its dough uses probiotics and fermented cultures developed by the bakery. The bread counter extends beyond decorative pastries to products built around fermentation and basic dough work. The mentaiko baguette uses a baguette with a firm, chewy exterior and a soft crumb, topped with cod roe that is restrained in salt and carries a mild aroma. Salt bread has a chewy rather than brittle crust. Garlic baguette and mammoth bread are longstanding items, while the master sandwich fills a baguette-style loaf with a substantial savory interior. The shop also makes croissants, pain au chocolat, red-bean bread, chocolate baguette, twisted doughnuts, and pizza bread with pepperoni and egg mayonnaise. Mont Blanc, mille-feuille soboro, and a soft cream roll add laminated pastry and cream-filled forms. Cakes occupy a separate part of the selection and include fresh-cream cakes as well as custom-made celebration cakes. The fresh cream has more body than a very light milk foam, and the sponge has a loose, fine crumb. Pastries, handmade cakes, packaged confectionery, and gift sets are sold alongside the daily bread. The Guwol location remains both a neighborhood bakery and the operating base associated with An's wider group of direct branches.
