Sweet-tart sauce and a light sprinkle of sugar go into the bibim makguksu. The buckwheat content is not especially high, so the noodles stretch and chew rather than snapping. Memil-jeonbyeong, a thin buckwheat roll pan-fried around a kimchi-dumpling-style filling, sits well beside them.
