Jeju black pork is fried three ways here: sirloin, tenderloin and cheese. Instead of sauce, the plate comes with pink salt and truffle oil. Salt alone seasons the pork well enough, and the truffle oil is for the few pieces where you want more aroma. The cheese cutlet has cheese stuffed inside the meat. It is a ground-floor room on the Hado-ri coastal road, and the sea sits right outside the window anyway.
