Myeongjin Jeonbok 명진전복

Abalone stone-pot rice soaks up the flavor of the innards, with dates and chestnuts tucked in. Once the rice is scooped out, water poured into the hot pot turns the scorched layer into sungnyung, a toasty rice soup. Salted grilled mackerel comes as a standard side, and since the abalone rice and grilled abalone are seasoned too, the plain sungnyung balances things out. A group can share the pot rice, grilled abalone and raw abalone slices without ordering one rice dish per head. The abalone is farmed.
