Mingyeong's Mulhoe Guksu 민경이네 물회국수

A whole rockfish comes to the table deep-fried, and staff pick the flesh off while explaining that everything but the spine can be eaten. Fins and head crunch, but plenty of hard bits remain, which is tough going for anyone with weak teeth. The sweet, mildly spicy sauce is worth saving to mix with rice. Set A adds mulhoe and a seafood doenjang stew to the fried fish, and with three salted seafood sides and kimchi, the meal as a whole runs salty.
