Noodles made from 100% buckwheat come out thin and plain, which feels like a different dish altogether if you are used to makguksu topped with seaweed flakes and sugar. Deulgireum makguksu is dressed with perilla oil alone, no soy sauce or sugar. It tastes mild at first and grows more aromatic as you eat. Groups tend to share myeongtae-hoe suyuk (boiled pork with seasoned pollock) or a seafood pancake.
