The steamed mandu have wrappers so thin they vanish as soon as they hit your mouth, leaving the texture and juice of the filling; by evening they are often sold out. Kalguksu comes in two broths: the beef-bone one is rich but not greasy, and the yukgaejang one is spicy and full of shredded beef. The noodles are made in house and chewy. The lunch line looks long but moves fast.
