The restaurant was reportedly established by someone who previously worked at the renowned Jungang Haejang in Samseong-dong, and the visual presentation and flavors share an approximately ninety-nine percent resemblance while pricing sits slightly lower. The yang-seonji haejang-guk uses domestic Korean tripe rather than imported pre-cleaned variety, portioned generously in a milky bone broth that appears heavy but actually drinks with a surprisingly light, clear quality underscored by deep umami. Adding half a spoonful of cheongyang chili daedegi at a time builds a satisfying spicy kick, though the pickled chili peppers are quite salty and best used sparingly. The naejang-tang offal soup at around 15,000 won showcases immaculately cleaned intestines with zero gaminess, their texture striking a refined balance between springy resilience and tenderness. The gopchang-jeongol tripe hot pot, priced at 65,000 won for the medium size, features plump, fresh intestines packed with fat as its centerpiece, while the vegetables release natural stock as they cook down, gradually tempering the broth's initial intensity into a balanced depth. The recommended progression is to add noodles midway through and finish by stir-frying rice in the remaining broth. Seokbakji radish kimchi and geotjeori fresh kimchi accompany the meal. The dining space is exceptionally large, making it well-suited for group gatherings, corporate dinners, and large parties.
