The perilla broth is closer to porridge than soup — remarkably thick and nutty, evoking a Korean interpretation of cream bisque. The noodles are kneaded with tot (sea grapes), giving them a uniquely springy and slippery texture that holds its chew from the first bite to the last without going soggy. Ordering the kalguksu brings complimentary barley bibimbap and boiled pork, and the suyuk is tender and clean with no off-flavors — wrapping it with dried radish strips and shrimp paste creates an exceptional side pairing.
