Byeorang Sundaeguk 벼랑순대국

Byeorang Sundaeguk is a blood-sausage soup specialist established in 2013 at 428-90 Beon-dong in Gangbuk-gu, Seoul. Its namesake Byeorang soup uses a red broth filled with house-made sundae, small intestines, other offal, and eolgari cabbage. The red seasoning and leafy cabbage distinguish it from a standard pale sundae broth, while the quantity of offal gives the bowl a structure closer to a compact intestine hotpot. The stock is concentrated enough to set into a gel as it cools and carries a light pepper aroma. Sundae is made by the restaurant, with a soft casing around a savory filling. Lean pork and head meat appear in thick pieces rather than as finely shredded garnish. Teuk sundae soup takes a different route with clear broth and a mixture of sundae, meat, and offal. Separate lean-meat, offal, head-meat, and sundae-only versions change the central solid ingredient without covering every bowl in the signature red seasoning. The soups are accompanied by a sweet and spicy garlic sauce for the meat and sausage. Salted shrimp and a second red seasoning remain separate, so they alter salinity or heat without changing the stock in the kitchen. Kkakdugi provides firm radish cubes, and a tart dressed chive side adds raw stems and acidity beside the hot pork broth. A complete bowl places the concentrated stock, sausage, and the selected pork cuts together in an earthenware vessel, while the garlic sauce, seasonings, diced radish kimchi, and chives arrive in smaller dishes around it. The ingredient divisions among the signature, special, lean-meat, offal, head-meat, and sundae-only soups make the contents of each bowl identifiable before any table seasoning is added.
