Byeorang Sundaeguk has operated as a small blood sausage soup specialist in Gangbuk-gu since 2013. To maintain quality across its six tables, the owner operates only this single location. Weekday lunch waits often exceed 30 minutes, even in extreme summer heat. The broth is extracted to a high concentration, turning into a gel when chilled, yet remains clear and free of gamey odors with a subtle pepper aroma. The signature red version includes dried cabbage, house-made sundae, and intestines, resembling a small intestine hotpot. For a cleaner taste, the Teuk Sundaeguk offers a clear broth. Sundae is made in-house with soft casings and savory fillings, accompanied by tender meat. A sweet-spicy garlic dipping sauce at each table is a primary reason many regulars return. As the soup arrives pre-seasoned, tasting before adding salted shrimp is necessary to avoid over-salting. Kkakdugi and vinegary chive salad balance the richness of the soup. Street parking is the only option and restrooms are located outside the building. Takeout orders exclude steamed rice, chive salad, and dipping sauce.
