Byeorang Sundaeguk is a Korean blood sausage soup specialist in Beon-dong, Gangbuk-gu, Seoul, established in 2013. Despite seating only about six tables in a compact space, weekday lunch waits of 30 minutes or more are entirely routine, and the queue persists even on sweltering summer days exceeding 30 degrees Celsius. The restaurant operates as a single location with no branches, a deliberate choice that reflects the owner's commitment to maintaining quality at one point. The broth is the centerpiece — deeply extracted and remarkably clean with no trace of off-flavor, reaching a concentration so intense that it solidifies into a gel when cooled. A subtle hint of black pepper lifts the umami profile. The signature Byeorang Sundaeguk (red broth version) is generously loaded with ugeoji (dried cabbage leaves), house-made sundae, and gopchang (intestines), creating a composition closer to a small gopchang jeongol than a typical soup — an especially strong recommendation for those who enjoy gopchang hotpot. The Teuk Sundaeguk offers a lighter, clear-broth alternative that is equally clean. The sundae is made in-house, with a tender casing enclosing a savory, nutty filling. The accompanying meat pieces are notably soft, and orders of sundae-only or meat-only variations are available. A sweet-spicy garlic dipping sauce placed on every table transforms each bite of the extracted toppings, and many regulars cite this sauce as the single element that converted them into repeat visitors. The soup arrives fully seasoned, so tasting before adding saeujeot (salted shrimp) is essential — adding it reflexively risks over-salting. Tangy kkakdugi and a vinegary chive salad complement the richness of the broth, with the chive salad's acidity pairing particularly well. Two types of dadaegi (spice paste) are available on the table for further customization. There is no parking lot — street parking in the surrounding area is the only option — and the restroom is located outside the building. When ordering for takeout, note that rice, chive salad, and dipping sauce are not included in the packaging.
