The mul makguksu features a mild yet deeply flavored broth accented with sesame oil and laver flakes, delivering satisfaction from the very first spoonful. A small amount of dadaegi chili paste is included by default, but the overall profile leans toward the gentle side, resembling Pyongyang naengmyeon in its subtlety, diners unfamiliar with makguksu may find it understated. Noodle portions are substantial enough to fill up without ordering extra. The bibim makguksu is topped with gajami sikhae, fermented flatfish, which lends a distinctive sweet depth to the dish. The seasoning is gentle rather than aggressive, making it approachable even for those sensitive to spice. Adding vinegar and mustard at the table unlocks an additional layer of flavor.
