Before the soup arrives, a retro metal lunchbox lands on the table holding rice and a fried egg, with radish salad, bean sprouts, and lettuce to mix in with gochujang and sesame oil as a quick bibimbap. Only part of the rice goes into it, and the rest is saved for the soup. The Busan-style pork soup holds lean slices only. Seokeo-gukbap mixes pork, offal, and sundae (Korean blood sausage), closer to the version common around Seoul. The large mixed bowl uses traditional sundae filled with grain and blood rather than glass noodles. The broth is lightly seasoned, so salted shrimp, salt, and chili paste sit on every table, along with plenty of chives. A spicy red version of the soup is also offered.
