Uiryeong Sikdang 의령식당

Instead of the milky broth most Busan pork-soup shops serve, Uiryeong Sikdang ladles a clear, clean dwaeji-gukbap with no porky funk, in an older style. Meat in the bowl is mostly lean, though fattier cuts come on request, and the suyuk baekban plate of boiled pork leans fattier by default. Salted shrimp handles the seasoning, alongside cabbage kimchi, radish kimchi and chive salad made by the couple who run the place. Only six tables fill the room, so lunch means a wait, and early in the morning neighbors back from the nearby hot springs have their gukbap with a drink.
