The mugeunji here follows a traditional method that avoids sugar to mask sourness, resulting in a strikingly tart kimchi that divides opinion. That tartness, however, is precisely what makes the pairing work. The mackerel arrives with plump, fatty flesh that is rich and savory, and layering a piece over the sour kimchi with a scoop of rice produces an addictive combination.
