Each station in this basement buffet under the 63 Building has its own cook, so dishes are made as you ask for them. Seating runs two hours and needs a reservation. Three hours of free parking leaves time for a walk along the Han River just outside. Tell the sushi chef which fish you want and the nigiri is shaped on the spot. Snow crab (daege), lamb chops (yanggalbi) and LA-style beef short ribs anchor the hot side, gambas and other shrimp dishes sit nearby, and the dim sum is better than buffet dim sum usually is. Fruit at the dessert counter is notably sweet, vegan dishes are labeled separately, and plates are cleared quickly between wide-set tables.
