Rather than chasing a long buffet line, Aria inside the Josun Hotel keeps the spread shorter and puts the effort into each dish, and the room is smaller and quieter than most large hotel buffets. Dinner centers on lamb ribs, snow crab, lobster, and sweet shrimp sashimi, with snow crab curry and grilled pork jowl alongside. Seasoning stays light. Seasonal bingsu in flavors such as corn, sweet persimmon, and ripe persimmon is ordered separately from the table. Breakfast includes very soft French toast and sanuki udon with a strong bonito aroma.
