Sinseung Banjeom (New Seung Restaurant) is a Chinese-Korean restaurant in the Chinatown district of Jung-gu, Incheon, operated by a descendant of Gonghwachun, the restaurant credited with originating Korean-style jajangmyeon, making it one of the most historically significant eateries in the area. The house yuni-jjajang features finely minced meat and onion wok-fried deeply with chunjang (black soybean paste), producing a thick, weighty sauce with a pronounced umami character. The toasted aroma of the fermented paste distinguishes this bowl from the chemical-forward versions served at chain restaurants. Noodles are particularly thin, and the combination of delicate strands with the dense sauce is where the dish reaches its peak, earning comparisons to a benchmark jajangmyeon. The jjamppong carries a clean broth loaded with seafood and pork, while the white jjamppong features abundant shellfish and a clear, nuanced soup base. Fried rice is wok-tossed to a dry, grain-separated texture with a visible char aroma, evoking the nostalgic character of classic Chinese-Korean cooking. The chapssal-tangsuyuk (glutinous rice sweet-and-sour pork) is crispy-shelled with a measured sweetness faithful to the older style. The prawn kangpung-gi delivers a satisfying crunch outside with juicy meat inside. Handmade mandu (dumplings) are filled generously with chives for a clean, straightforward flavor. Winter-only gul-jjamppong (oyster jjamppong) draws mixed responses and is worth treating as a secondary consideration. Staff are mostly Mandarin-speaking, which can slow communication, so ordering patiently and clearly helps. Public holidays generate queues of twenty or more parties from the moment doors open at 11 AM, pushing waits past an hour, making a weekday visit paired with a Chinatown walk a considerably more comfortable experience.
