Seongbuk-dong Memil Sujebi Nurungji Baeksuk 성북동 메밀수제비 누룽지백숙

One whole nurungji baeksuk, a slow-boiled chicken with scorched rice, feeds about four, so pairs often take leftover chicken and rice home. The farm chicken has small bones and falls off them easily, and its plentiful fat makes the hot broth rich and nutty. After the chicken, chewy scorched rice simmered in the broth becomes a porridge-like nurungji tang to finish. Running since 2005, the restaurant serves no alcohol, and two-person groups can be seated faster in the attic-style floor seating. Memil jeon, a buckwheat pancake topped with buckwheat sprouts, stonecrop and a tangy-spicy dressing, wakes up the palate before the chicken, and memil sujebi, buckwheat dough soup, fits alongside the porridge.
