Dongu Seolleongtang 동우설렁탕

A small plate of radish-kimchi liquid comes with each seolleongtang, meant for dipping the thin somyeon noodles into as a kind of improvised kimchi noodle bite. Because the noodles are warm it is not the same as chilled kimchi-mari-guksu. Try one mouthful first and drop the rest into the soup if it does not suit. The milky broth is clean, with little gamey smell, and the rice comes already soaked in it. Salt, scallions, chili flakes and minced garlic on the table handle the seasoning, and rice and noodles are refilled free. The only other dish is suyuk, boiled beef that is softer than the thin slices in the soup.
