I had seolleongtang and beef offal suyuk at this 50-year-old seolleongtang institution, a four-minute walk from Gongdeok Station Exit 9. The broth sits between clear and milky, a textbook seolleongtang profile, with a balanced interplay of refreshing, nutty, and meaty umami. The meat is mostly yangji cut thin, which limits richness slightly, but paired with thin noodles it makes a solid meal. The scallion kimchi pairing with the broth is outstanding, and the radish and napa kimchi are both well-fermented. The offal suyuk platter includes all four beef stomachs, offering an interesting textural range that works perfectly as a soju companion. Seating across two floors is generous, making solo dining and weekday dinners comfortable without any wait. You order at the table and pay at the counter after the meal. Among Mapo's three major seolleongtang restaurants, this is the most accessible with the shortest waits. At 14,000 won the price has climbed above what many consider the national gukbap standard.
