Jungnimjang Seolleongtang has occupied the same spot in Seoul's Junglim-dong since 1972, making it one of the city's most enduring seolleongtang establishments. Entering the restaurant, a strong beefy aroma from the slow-simmered ox bones fills the air, which can be polarizing for scent-sensitive visitors but is considered the hallmark of an authentic seolleongtang house. The broth itself contrasts with the aroma, presenting a clean, clear profile that arrives lightly seasoned, allowing diners to adjust salt to personal preference. Scallions are added by default, with ground pepper left as an optional addition. The special seolleongtang contains a varied assortment of brisket, shank, and head meat, providing diverse textures in each spoonful, with wheat noodles served in the broth and rice provided separately. Portions appear modest at first glance but prove surprisingly substantial.
