The Korean tasting course on the 23rd floor of The Shilla Seoul is built from familiar dishes, but seasoned noticeably lighter than at ordinary restaurants. Hanwoo galbijjim, braised Korean beef short ribs, is a paid add-on; the fat inside the meat stays just short of melting and turns buttery as you chew. The yukhoe bibimbap looks stiff with raw beef, but the rice is already seasoned and it comes together once stirred.
