Pildong Myeonok is a naengmyeon restaurant on Seoae-ro in Jung-gu, Seoul, annually recognized with Blue Ribbon and Michelin Star distinctions and widely respected as one of the city's premier Pyongyang naengmyeon establishments. Many consider it the finest among the Uijeongbu lineage of Pyongyang naengmyeon restaurants, sharing a culinary heritage with Euljimyeonok. The clear broth appears deceptively simple on the first spoonful, presenting a clean mildness that gradually reveals layers of deep beef flavor and umami with each sip. Even cold, the broth remains free of oiliness. The buckwheat noodles are springy and slightly sticky with excellent digestibility, adjustable with mustard, vinegar, and chili powder according to personal taste. The mandu is a quiet highlight, thin, delicate wrappers encase a filling densely packed with vegetables and meat, where crunchy onion bites and mild seasoning make dipping sauce unnecessary. Suyuk is available in either pork or beef, with beef earning the stronger recommendation. The cold pork belly suyuk has a pleasantly chewy rind and pairs well with naengmyeon when dipped in the house sauce. Onmyeon provides a warm noodle option for cold weather, described by diners as evoking a comforting, homecoming flavor. The house kimchi is excellent and worth requesting refills. Seating extends across a spacious ground floor and second level, and weekday lunch slots sometimes avoid waits, though weekends draw significant queues.
