On the second floor near Gangnam Station, the dining room is roomy and the kitchen fully open, so the bowls are assembled in plain view. Tori paitan is a dense chicken broth kept from turning salty or greasy, and kara paitan layers chili on top. Kimchi and pickled ginger come as standard sides to reset the palate between spoonfuls. Seating works well for eating alone. Noodles, rice and broth refills cost nothing, and asking for a refill of the spicy broth to mix into the plain one gives a second, different bowl.
