Oreno Ramen Insa is a chicken-broth-based ramen restaurant in Anguk-dong, Jongno-gu, Seoul, and a branch of the brand that became the first ramen shop in Korea to earn a Michelin Bib Gourmand. Starting from the Hapjeong flagship, the brand now operates multiple Seoul locations and has also topped the ramen rankings on Google and Mango Plate. The two main bowls are tori paitan and kara paitan. The tori paitan features a milky chicken broth with black pepper, evoking the deep, clean flavor of concentrated samgyetang. The kara paitan layers in a gentle heat that stays satisfying rather than aggressive. Chicken breast chashu, prepared sous vide, is remarkably tender and free of any off-flavor, while caramelized onion and garlic flakes contribute an addictive savory note. The noodles are thin but springy, and when eaten with the wood ear mushroom topping they add a pleasant crunch. Compared to typical ramen, the sodium level runs noticeably lower, making the bowl easy on the stomach and comfortable enough for older diners. Noodles, rice, and kimchi are all available for unlimited refills, and noodle top-ups come with additional toppings for added value. The soft-boiled egg is seasoned through to a custardy yolk, and chashu can be added for 2,000 won. Pickled radish is served alongside to offset any richness mid-meal. The space follows the compact layout typical of ramen shops, with bar seating and a couple of tables for parties of three or more. Holiday evenings may bring roughly a thirty-minute wait, but kitchen turnover is fast enough that food arrives promptly once seated. Staff are attentive and accommodating, making the restaurant comfortable for families with young children as well.
