I usually order the shio ramen, where the chicken and seafood base combined with yuzu creates a refreshingly light bowl that never turns heavy, even at the bottom. The thick-sliced Iberico pork chashu has a subtle char that adds smokiness, and the bamboo shoots provide crunch while the arugula offers a peppery bite that prevents monotony. A major draw is the free refills of both noodles and broth, and the house-made whole wheat noodles are thin yet springy. The yuzu concentrate on each table should be used sparingly, as too much shifts the flavor toward excessive sourness. The gyoza and chicken karaage pair nicely with the ramen, and their highball is well-mixed. Lunchtime waits are long, but remote queuing through Catch Table helps considerably.
