Jongno Gopchang 종로곱창

Cabbage, onion and chili go onto the hot plate with the beef intestines in yachae-gopchang, the dish this place revolves around. The spicy sauce picks up sweetness from the vegetables, and it works with a bowl of rice or as a drinking snack. Pa-kimchi, the green onion kimchi served as a side, is meant to be grilled on the same plate, where its sourness cuts the fat. Whatever sauce remains becomes bokkeumbap, fried rice made right in the pan. Besides the indoor tables there is an outdoor terrace with a street-stall feel.
