Baekhwa Yang Gopchang, located near Jagalchi Market in Jung-gu, Busan, is the city's most iconic gopchang (beef intestine) establishment. The restaurant has a unique structure with multiple numbered branches lined up side by side, each operating independently. Branch No. 1 serves as the flagship, and each unit seats around 15 diners in a Japanese tachi-style counter arrangement where everyone sits elbow to elbow. Originally known as a budget-friendly drinking spot for locals, the restaurant gained nationwide recognition after multiple television appearances and has since become a mandatory stop for Busan tourists. Staff grill the intestines directly on briquette fire at the counter, and ordering both the salt-grilled and seasoned varieties is the standard approach. The salt-grilled version lets the smoky char of the briquettes merge with the rich fat of the intestines for a deeply savory result, while the seasoned version features a thick, intensely sweet-spicy-umami sauce that penetrates the offal thoroughly. The tripe offers a satisfyingly springy chew, and the gopchang itself is generously packed with fat that releases its nuttiness with every bite. Adding udon noodles to the seasoned gopchang allows the sauce to soak into the noodles for an exceptional side combination.
