The hanwoo gopchang platter brings beef small intestine, thick-cut large intestine, springy tripe and heart, with potato and rice cakes that cook in the rendered fat. Soft tofu soup or kimchi stew comes with the meal, along with seasoned bean sprouts. To finish, garlic gopchang fried rice is made on the hot plate in the leftover fat.
