Jinseong Hanwoo Gopchang is the signature gopchang restaurant of Seoul's Sindang-dong neighborhood, located on Dasan-ro in Jung-gu. The restaurant uses same-day butchered hanwoo (Korean beef) intestines, which ensures the gopchang arrives packed with creamy fat and completely free of any off-putting odor. Despite being hanwoo-grade, the pricing remains accessible, offering outstanding value. Staff handle all the grilling, using timers to achieve a precise crispy-outside, juicy-inside texture, allowing diners to focus entirely on eating. Beyond gopchang, the menu includes daechang and makchang. The daechang slides down with a pillowy, almost cloud-like softness that feels surprisingly light despite its richness, while the makchang offers a satisfying chewiness. A major draw is the house-made green onion kimchi and gat-kimchi, both prepared in-house. The crisp acidity of the kimchi creates a brilliant counterpoint to the rich, savory oils of the grilled intestines. Pairing bites with the garlic soy dipping sauce deepens the flavor further, and the house special sauce receives consistent praise. The signature finale is the kkakdugi-yangbap — fried rice loaded with diced pickled radish and pickled garlic cloves. The crunchy radish, pungent garlic, and clean-flavored tripe combine to sweep away any lingering heaviness from the grilled courses. Hot noodles or a spicy-savory fried rice also serve as excellent closers. The staff are remarkably fast and friendly, maintaining a pleasant dining atmosphere. However, the restaurant draws waits even on weekday evenings, so arriving a bit early is advisable. An efficient system keeps table turnover at a reasonable pace.
