Hwanggop 황곱

Staff grill the sogopchang, beef small intestine packed with its creamy filling, from start to finish, and finished pieces come out crisp outside and moist inside. The modeum-gopchang platter adds sochang and daechang (large intestine) for comparing thickness and fattiness side by side. A seafood stew or hot pot simmers next to the grill as a standard side, along with chilled, sour muk-sabal, soft jelly in cold broth.
