Hand-torn dough pieces stay thin and chewy, and the sujebi (hand-pulled dough soup) never tastes heavy or floury. The basic bowl uses anchovy broth with oysters, the perilla seed version (deulkkae sujebi) is creamy and oyster-free, and the spicy one (eolkeun sujebi) bites hard enough to bother anyone sensitive to heat. Oysters can be left out on request. Each bowl arrives in a small earthenware jar that keeps it hot to the end, and kimchi and dongchimi sit on every table. Dongdongju rice wine goes with seafood pancake or spicy whelk salad. Lunch brings a queue, though turnover is quick. Tables are packed close, and Seoul Pay, Zero Pay and Jongno gift certificates are accepted.
