Each bite of the beef pho has a different grain, with brisket, shank and beef chuck all in the bowl. The broth, cooked down from beef bones and brisket, is heavier than a clear pho stock and closer to Korean seolleongtang. Hyotteu fried rice is wok-fried with mussels, squid, baby squid and shrimp and has a spicy kick that the poached egg on top softens once broken.
