Huirak Banjeom is a long-established Chinese restaurant in Seonhwa-dong, Jung-gu, Daejeon, where the cooking has stayed consistent through the decades. The gan-jjajang at 7,000 won represents outstanding value, the vegetables are julienned into long strips rather than diced and are stir-fried in a high-heat wok that imparts genuine fire-kissed flavor. The noodles contain no alkaline strengthener, arriving with a pale, soft appearance and a pleasant elasticity that breaks cleanly with a gentle bite, making them easy to eat in large mouthfuls without jaw fatigue. The freshly wok-tossed sauce coats the noodles with a moistness that initially reads slightly salty but quickly finds its balance against the crisp vegetables. The yuni-jjajang is equally well-regarded, presenting a classic, old-fashioned jjajang flavor without modern sweetness. The tangsuyuk is battered with glutinous rice flour, creating an unusual textural contrast within a single batch, some pieces shatter with crispness while others yield a satisfying chew. It arrives pre-sauced by default, though separated sauce is available on request. The kitchen also handles a wide array of stir-fried dishes including kkansho saewu, kkanpunggi, gogi-twigim, palbochae, and menbosa, with the kkanpunggi and menbosa receiving particular praise. The menbosa showcases pure shrimp flavor, and the gogi-twigim takes on new dimension when paired with palbochae sauce. Multiple large private rooms at the back of the restaurant accommodate groups of eight or more. During busy periods, food can take considerable time to arrive, and main starch courses are served only after the shared dishes are finished, so patience is required. Weekend dinner waits commonly exceed twenty minutes, and the parking area is tight enough to demand advanced maneuvering skills.
