The ganjjajang vegetables are cut into long julienne strips instead of the usual dice and tossed over high heat, so crisp vegetables and a faint smokiness wrap around the noodles. The noodles are made without improvers, pale and breaking cleanly at a light bite. Yuni-jjajang is the mildly seasoned old-style version. Tangsuyuk in a glutinous rice batter comes out part crisp, part chewy, with sauce poured over unless you ask for it on the side. Noodle dishes only arrive once the shared dishes are finished.
