The restaurant relocated to its current two-floor premises after the Hannam-dong redevelopment, losing some of the original hole-in-the-wall charm but gaining space while keeping the recipe unchanged. The chicken is roasted at high heat over oak charcoal, producing skin that is paper-thin and shatteringly crisp, while the interior meat stays moist and tender - breast meat included, which avoids the dryness common in whole-roasted birds. The back skin, peeled away in a single sheet, is a particular indulgence, and the wings cook down enough to be eaten bone and all. Inside the cavity, glutinous rice, whole garlic cloves, and herbal ingredients roast alongside the bird; the rendered fat and aromatic herbs permeate the grain, creating a side that resembles a richly flavored risotto.
