Gwanghwamun Gukbap 광화문국밥

Gwanghwamun Gukbap is a Michelin-recognized pork soup restaurant in the Jeongdong area of Seoul's Jung-gu, located a four-minute walk from Gwanghwamun Station Exit 6. The restaurant's defining quality is its remarkably clear, refined broth that departs entirely from the rich, heavily fatty style typically associated with dwaeji-gukbap. Each spoonful reveals a quiet, solid depth, with natural bone-marrow flavor surfacing without any trace of gaminess. A light dusting of pepper produces a taste so clean it could be mistaken for chicken gomtang, reflecting the unusual level of refinement applied to a traditionally rustic dish. The pork arrives in a generous assortment of different cuts, and ordering the special (large) size increases the portion further. The banchan spread includes kkakdugi, pa-kimchi (scallion kimchi), ojingeo-jeotgal (squid jeotgal), oi-gochu (pepper), and sliced garlic, with the kkakdugi achieving such a high standard that it functions less as a side and more as a co-starring element of the meal. Sundae and suyuk are available as additional menu items, making the restaurant well suited for pairing with drinks, and many evening guests order galbi-jjim as anju. Located at the far end of the Jeongdong paid parking lot, the entrance may be somewhat confusing on a first visit, though the Michelin certification stickers on the door serve as a helpful marker.
