Geodae Gomtang 거대곰탕

Hanwoo bone and brisket simmer long enough that the jinhan ppoyan gomtang turns thick as cream soup, yet it finishes clean rather than greasy. Minced garlic, scallion and pollack roe go in partway, each changing the bowl, and chili paste comes on request for a spicier version. Malgeun gomtang, the clear broth, is light enough to recall good naengmyeon stock with rice in it. The rich white soup can sell out early on weekends, and remote queuing helps on weekends and evenings.
