For the galchi sotbap, hairtail is carefully deboned, grilled and laid over pot-cooked rice, then eaten with wasabi and pickled chili. Stir the liver sauce through the abalone sotbap and it takes on the color of abalone-innard porridge. The rice runs soft, though, and anyone hoping for separate, fluffy grains may be let down. On arrival, write your name, party size, phone number and order on the waiting list; late in the afternoon the hairtail pot can already be sold out.
