Park Soonja Aunae Sundae is a Byeongcheon-style blood sausage restaurant at 47 Aunaesundae-gil in Byeongcheon-myeon, Cheonan. Its signature sausage has a substantial seonji, or pork blood, component combined with glutinous rice, vegetables, and glass noodles. The cross-section therefore looks and feels different from a sausage dominated by glass noodles. The cooked filling holds together when sliced but loosens softly in the mouth, with the sticky grain, finely cut vegetables, and smooth blood mixture contributing distinct textures. Sundae-gukbap places pieces of that sausage and assorted pork offal in an opaque broth. Salted shrimp is served as a seasoning, so the broth can be tasted first and adjusted gradually for salinity and fermented savoriness.
