The kitchen offers two base styles — the clear jiri broth and the spicy maeuntang — with different species of blowfish available for each. The bok-jiri features a clean, refreshingly light broth that benefits from a splash of vinegar. The house recommends a specific eating order: scoop out the bean sprouts and fish meat first, dip them in chogochujang vinegar-chili paste, then drink the remaining soup. Ordering the chambok maeuntang includes the prized blowfish skin, and single-portion orders are available, making it easy to sample multiple dishes. The pickled perilla leaves served as a side dish pair exceptionally well with rice. Since the restaurant never closes, it serves as a reliable early-morning hangover recovery stop during Busan trips.
