The signature order is the half-and-half of chadolbagi and yukhoe. Though the restaurant uses yukwoo (dairy cattle beef) rather than hanwoo, the quality consistently surprises diners who expected less. Breaking the egg yolk into the seasoned yukhoe and mixing it yields a well-balanced sweet-savory umami, and the addition of chili peppers brings a spicy accent. Wrapping the tartare in grilled chadolbagi creates a satisfyingly hefty meat-on-meat combination, and the chadolbagi itself is notably tender and supple, surpassing the quality found at many dedicated barbecue restaurants.
