24si Ppyeodagwi Gamjatang is a pork-spine stew and braised pork-spine restaurant in an alley of Hannam-dong, Yongsan, Seoul. Its ppyeo-jjim places cooked pork backbones beneath a large mound of bean sprouts and potato pieces, with a small amount of sauce remaining in the pan. The seasoning has a sweet and peppery heat that resembles an old-fashioned tteokbokki sauce more than the thick, heavily spiced coating associated with seafood jjim. Ground black pepper is clearly present in the sauce. The bean sprouts absorb the seasoning while retaining some bite, and the pork is cooked until it can be separated from the bones at the table. Large potato pieces take on the same sauce beside the meat and sprouts. The gamjatang uses pork backbones with potato, dried radish greens, and perilla leaves in a soup. Mugeunji gamjatang adds long-fermented kimchi, bringing its acidity into the broth and pork. Glass noodles and additional leafy greens are also handled as additions to the stew. Fresh geotjeori kimchi is served beside both the soup and the braised dish. After ppyeo-jjim, the remaining sauce can be cleared of larger pieces and used to fry rice as another cooked dish. The interior has the close table spacing and bright lighting of an older neighborhood restaurant rather than a divided dining room. When many seats are occupied, conversations and the sounds of serving food overlap throughout the room. Celebrity autographs and traces of television appearances cover parts of the walls, adding to the dense visual character of the dining area.
